Marta's Best Ever Pancakes

1 3/4 cup milk (can use part buttermilk, if preferred)
1 egg, beat well
1/3 cup oil
1 tsp. salt
3 Tbls. sugar
2 cups wheat flour
(Marta uses 1 1/2 cup wheat, 1/4 oats, 1/4 ground flaxseed)
4 tsp. baking powder

Mix all ingredients only until combined. Batter will be lumpy.
Cook on hot skillet. Makes about 12 pancakes 4 1/2'' in diameter.
For waffles, increase eggs to 3 and oil to 2/3 cup.

The flax seed flour replaces eggs in this recipe. I am sure they turn out light and fluffy. You can also use 2 tblsp flax flour mixed into 1/4 cup water to replace one egg in a baking recipe.
